After harvest, cherry is delivered to the farm’s processing center, where it is fermented in sealed bags. Then, cherry is laid to dry in a parabolic dryer. Parchment is turned frequently to ensure even drying. In the cup, it’s easy to see how the juicy red fruits and orange flavors make this complex, layered cup a winner!
